This soup is a delightful marriage of cozy comfort and bold flavors—just the kind of meal that wraps you up in a hug on the days you need it the most.
What inspired me to create this comforting soup recipe?
The inspiration behind this recipe came from my sheer love for pesto and the desire to create a hearty soup that encapsulates its vibrant taste. A few years back, during a particularly cold winter, I found myself craving something warm but also packed with flavor. I whipped up a batch of pesto from fresh basil from my garden, and as I stirred it into my chicken soup, magic happened. The blend of savory chicken, aromatic herbs, and creamy broth transported me straight to a sun-drenched Italian trattoria, and just like that, chicken pesto soup was born.
I envisioned this chicken pesto soup as something that could fit seamlessly into a busy lifestyle, whether you toss it together in an Instant Pot on a weeknight or let it simmer gently on the stovetop for a leisurely weekend cook. It strikes the perfect balance of being nourishing without feeling heavy—ideal for young professionals who need to refuel after a long day.
This is more than just a recipe; it’s a reminder that food can be a source of comfort and joy in our everyday lives. Whether you’re enjoying it solo with a good book or serving it at a gathering, this soup brings people together. And the best part? You likely already have many of the ingredients at home, making it a convenient choice for any day.
So, roll up your sleeves and prepare to create something truly exceptional that will make your senses sing. There’s nothing better than a bowl of chicken pesto soup bringing warmth and happiness to your kitchen.

Key Ingredients for Chicken Pesto Soup
Chicken: For a juicy and flavorful base, I use boneless, skinless chicken breasts. They cook quickly and evenly, making them ideal for both the Instant Pot and stove. This lean protein not only provides substance but also soaks up the delicious flavors of the broth and pesto.
Cauliflower Rice: I prefer frozen cauliflower rice for ease. It cooks down beautifully in soups and provides a nutritious boost without overwhelming the dish. Plus, using frozen means you can skip the prep work!
Vegetables: I incorporate onion, carrots, and celery to create a rich, aromatic foundation. These classic mirepoix ingredients enhance the soup’s flavor profile, adding depth and sweetness.
Chicken Broth: A good quality chicken broth elevates the soup’s taste significantly. Fresh homemade broth is always a treat, but high-quality boxed options work well in a pinch to maintain that comforting flavor.
Basil Pesto: This is the star ingredient! It adds a fresh and vibrant flavor that brings the entire chicken pesto soup together. Homemade or store-bought, a generous scoop really transforms the dish into something special.

Cooking Tips and Notes for Chicken Pesto Soup
Instant Pot vs. Stovetop: Quick Cooking Methods
When you’re craving a comforting bowl of chicken pesto soup, choosing between the Instant Pot and the stovetop can significantly affect your cooking experience. The Instant Pot is the time-saver here. In just about 15 minutes, you can have a rich, flavorful soup that highlights the fresh ingredients. If you go the stovetop route, you may need about 30-40 minutes, allowing deeper flavors to meld together as the soup simmers slowly. Both methods yield delicious results; it all comes down to your schedule and preference for hands-off cooking or enjoying a slower process.
Recommended Adjustments for Dietary Preferences
Everyone has different dietary needs, and your chicken pesto soup can easily be adapted. If you want a low-carb version, consider using zucchini noodles or cauliflower rice instead of traditional pasta. Seeking a vegetarian option? Substitute the chicken with hearty vegetables like mushrooms or chickpeas, and replace chicken broth with vegetable broth. Both adjustments maintain the soup’s heartiness while catering to various diets without compromising flavor.
Remember, feel free to experiment with ingredients—personalizing your soup makes it all the more enjoyable!
