- 1/2 cup blueberry preserves or thick blueberry jam
Instructions
- Cream the butter and sugar: Start by creaming the softened butter and powdered sugar in a large mixing bowl until the mixture is light and fluffy. This sets the base for that melt-in-your-mouth texture.
- Add flavorings: Mix in the vanilla extract and almond extract. That hint of almond gives the cookies their signature flavor and pairs beautifully with the blueberry filling.
- Mix the dry ingredients: In a separate bowl, whisk together the flour, salt, and ground almonds. Gradually add the dry mixture into the butter mixture, stirring until a soft dough forms. It should come together but still be pliable enough to shape.
- Chill the dough: Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes. This makes it easier to handle and helps prevent spreading during baking.
- Shape and fill the cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop a tablespoon of dough and flatten it slightly in your palm. Add about 1/2 teaspoon of blueberry preserves in the center. Gently fold the dough around the filling and roll into a ball. Place the balls on the baking sheet about 1 inch apart.
- Bake until set: Bake the cookies for 14–16 minutes, or until the bottoms are lightly golden. The tops will stay pale, so check the bottoms for doneness.
- Dust with powdered sugar: Let the cookies cool slightly, then roll them in powdered sugar while they’re still warm. Once fully cooled, roll them again for that classic snowy finish.
