Instructions

  1. Cream the butter and sugar: Start by creaming the softened butter and powdered sugar in a large mixing bowl until the mixture is light and fluffy. This sets the base for that melt-in-your-mouth texture.
  2. Add flavorings: Mix in the vanilla extract and almond extract. That hint of almond gives the cookies their signature flavor and pairs beautifully with the blueberry filling.
  3. Mix the dry ingredients: In a separate bowl, whisk together the flour, salt, and ground almonds. Gradually add the dry mixture into the butter mixture, stirring until a soft dough forms. It should come together but still be pliable enough to shape.
  4. Chill the dough: Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes. This makes it easier to handle and helps prevent spreading during baking.
  5. Shape and fill the cookies: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop a tablespoon of dough and flatten it slightly in your palm.
