A delicious recipe for cheesy double beef quesadillas, perfect for a quick meal or gathering!

- 1 lb ground beef
- 8 flour tortillas (medium-sized)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 packet taco seasoning
- 1 cup refried beans
- 2 tbsp vegetable oil
- Salsa, for serving
- Sour cream, for serving
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet, heat 1 tbsp of vegetable oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat and add the taco seasoning and a little water (about 1/4 cup). Stir well and simmer for 2-3 minutes. Set aside.
- In the same skillet, add another tbsp of oil if needed. Sauté the diced onions and bell peppers for about 3-5 minutes until softened. Set aside.
- Lay out the tortillas. Spread a thin layer of refried beans on half of each tortilla. Sprinkle a handful of cheddar and Monterey Jack cheese over the beans. Evenly distribute the cooked beef and sautéed vegetables on top of the cheese. Add another layer of cheese for extra cheesiness.
- Fold the tortilla over to cover the filling. Press gently. In a clean skillet, cook each quesadilla over medium heat for about 2-3 minutes per side until tortillas are golden brown and cheese is melted.
- Cut each quesadilla into wedges. Serve with salsa and sour cream on the side. Garnish with fresh cilantro if desired.
Notes
- For extra flavor, add jalapeño or cayenne pepper to the beef mixture while cooking.
- If you like a crispy texture, brush the tortillas with a bit of oil before cooking.
- Experiment with different cheeses for varied flavors. Pepper jack adds a nice kick!
- Customize with additional ingredients like corn, avocado slices, or black olives.
