Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Prepare Sweet Potatoes: Peel and thinly slice the sweet potatoes. Aim for uniform slices to ensure even cooking.
  3. Make Cheese Sauce:
    • In a saucepan over medium heat, melt the butter.
    • Add minced garlic and sauté until fragrant (about 1 minute).
    • Pour in the heavy cream, and stir in the thyme, salt, pepper, and nutmeg if using.
    • Gradually add 1 1/2 cups of shredded cheese to the cream mixture, stirring until the cheese melts and the sauce becomes smooth.
  4. Assemble the Gratin:
    • In a greased baking dish, arrange a layer of sweet potato slices.
    • Pour a portion of the cheese sauce over the potatoes.
    • Repeat the layers until all the sweet potatoes and sauce are used, ending with a layer of sauce on top.
  5. Top and Bake:
    • Sprinkle the remaining 1/2 cup of cheese evenly over the top layer.
    • Cover with aluminum foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly and the potatoes are tender.
  6. Let It Rest: Allow the gratin to rest for about 10 minutes before serving. This helps the layers set and makes serving easier.
