A delicious cranberry streusel coffee cake perfect for breakfast or dessert.

- 1 cup granulated sugar
- 2 cups all-purpose flour

Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
- Prepare the Streusel: In a small bowl, combine 1/2 cup brown sugar, 1/4 cup flour, and 1/2 teaspoon cinnamon. Cut in 1/4 cup cold, cubed butter until the mixture resembles coarse crumbs. Set aside.
- Prepare the Cake Batter: In a large bowl, cream together 1/2 cup softened butter and 1 cup granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract. In another bowl, combine 2 cups flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture, alternating with milk, starting and ending with the dry ingredients. Mix until just combined. Fold in the fresh cranberries gently.
- Assemble the Cake: Pour half of the batter into the prepared loaf pan. Sprinkle half of the streusel mixture over the batter. Repeat with remaining batter and top with the remaining streusel.
- Bake: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- If you prefer a sweeter cake, you can increase the amount of sugar slightly or sprinkle extra sugar over the cranberries for a sweeter burst.
- Substitute orange zest or juice for half of the milk for a citrusy flavor.
- Ensure butter is well softened for easier creaming with sugar.
- For a richer flavor, you can use buttermilk instead of regular milk.
