Delicious and healthy chocolate protein muffins perfect for breakfast or a snack.
Ingredients

- 1/4 cup chocolate protein powder (whey or plant-based)
- 1/4 cup unsweetened cocoa powder
- 1/4 cup almond flour (or oat flour)
- 2 tablespoons Greek yogurt (plain, non-fat)
- 1 tablespoon maple syrup (or honey)
- 2 tablespoons almond milk
- 1 egg
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 tablespoon mini chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the chocolate protein powder, cocoa powder, almond flour, baking powder, and salt.
- In another bowl, whisk together the Greek yogurt, maple syrup, almond milk, and egg.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the mini chocolate chips if using.
- Divide the batter evenly among the muffin tins.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For a sweeter option, add more maple syrup or honey.
- These muffins can be stored in an airtight container for up to a week.
