Description

Delicious and healthy chocolate protein muffins perfect for breakfast or a snack.


Ingredients

  • 1/4 cup chocolate protein powder (whey or plant-based)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond flour (or oat flour)
  • 2 tablespoons Greek yogurt (plain, non-fat)
  • 1 tablespoon maple syrup (or honey)
  • 2 tablespoons almond milk
  • 1 egg
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the chocolate protein powder, cocoa powder, almond flour, baking powder, and salt.
  3. In another bowl, whisk together the Greek yogurt, maple syrup, almond milk, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the mini chocolate chips if using.
  5. Divide the batter evenly among the muffin tins.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter option, add more maple syrup or honey.
  • These muffins can be stored in an airtight container for up to a week.
