- 1 lb boneless, skinless chicken breasts, diced
- 1 cup bell peppers (mixed red, yellow, green), sliced
- 1 cup fresh broccoli florets
- 1 cup carrots, thinly sliced
- 3 cloves garlic, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 3 tbsp brown sugar
Instructions
- Slice chicken into bite-sized pieces and chop vegetables into uniform sizes.
- In a bowl, whisk together soy sauce, rice vinegar, brown sugar, and minced garlic to create the sauce.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (about 5 minutes).
- Add bell peppers, carrots, and broccoli; sauté for about 4 minutes until slightly tender.
- Pour the sauce over chicken and vegetables; stir well and let simmer for another 2 minutes.
- Serve over rice or noodles.
