Description

A delicious and creamy casserole featuring kielbasa sausage, potatoes, and plenty of cheese.


Ingredients

  • 1 ½ pounds russet potatoes, peeled and diced into 1-inch cubes
  • 14 oz smoked kielbasa sausage, sliced into ¼-inch rounds
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 teaspoon dried parsley (or fresh for garnish)
  • Nonstick spray or butter for greasing the casserole dish

Instructions

  1. Peeled and cubed the potatoes into 1-inch pieces for even cooking. Slice the kielbasa and prep the aromatics.
  2. In a large skillet, brown the kielbasa over medium heat for 5-6 minutes until slightly crispy. Remove and set aside.
  3. In the same skillet, melt butter and sauté the diced onion until translucent, about 4 minutes. Add garlic and cook for 30 seconds.
  4. Stir in the flour to create a roux. Slowly whisk in milk and heavy cream until smooth and thickened.
  5. Season the sauce with paprika, pepper, and salt. Stir in shredded cheddar cheese and melt fully into a creamy sauce.
  6. Combine the cheese sauce, browned kielbasa, and potatoes in a large bowl. Mix gently to coat everything.
  7. Grease a 9×13 inch casserole dish and pour in the mixture. Top with extra shredded cheese if desired.
  8. Cover with foil and bake at 375°F (190°C) for 40 minutes. Uncover and bake for 15-20 more minutes until golden and bubbly.
  9. Let rest for 5-10 minutes before serving. Garnish with parsley.

Notes

  • Make sure to cube the potatoes evenly for consistent cooking.
  • Feel free to substitute fresh parsley for the dried parsley for garnish.
