- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef (or turkey/chicken)
- 1 cup cooked rice (white or brown)
- 1 can (14 oz) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese (mozzarella or cheddar)
Instructions
- Prepare Your Peppers: Wash bell peppers, slice off tops, and remove seeds.
- Cook Your Filling: In a skillet over medium heat, brown the ground meat with chopped onion. Drain fat if needed. Stir in diced tomatoes, cooked rice, minced garlic, Italian seasoning, salt, and pepper until heated through.
- Stuff Those Peppers: Fill each bell pepper generously with the meat mixture.
- Arrange in Slow Cooker: Place stuffed peppers upright in the slow cooker.
- Add Liquid: Pour enough broth or water to cover the bottom of the slow cooker (about half an inch).
- Let It Cook: Cover and cook on low for 6 hours or high for 3 hours.
