Creamy Baked Chicken Thighs

Description

Deliciously tender chicken thighs baked in a creamy sauce with hints of thyme and garlic.


Ingredients

  • 2 pounds bone-in chicken thighs (skin-on)
  • 1 teaspoon Creole Seasoning
  • 1/2 teaspoon ground thyme
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 1 teaspoon olive oil
  • 2 tablespoons unsalted butter
  • 1 cup sliced onions (white onion)
  • 1/3 cup heavy whipping cream
  • 1/3 cup chicken broth

Instructions

  1. Preheat oven to 350 degrees.
  2. Ensure the chicken thighs are dry and season them with Creole seasoning, thyme, garlic powder, salt, and pepper to taste.
  3. Heat a cast-iron skillet on medium-high heat and add 1 teaspoon of olive oil.
  4. When hot, add the seasoned chicken thighs and sear both sides for about 2 minutes each. The chicken does not have to fully cook through as it will be baked later.
  5. Remove the chicken from the skillet and set it aside.
  6. Add the butter to the pan and deglaze by scooping up the brown bits.
  7. Add the onions and cook until they are translucent and fragrant.
  8. Lower the heat to medium-low and add the chicken broth and heavy cream. Stir to combine for 2-3 minutes without boiling.
  9. Return the chicken to the pan and place the skillet in the oven to bake for 20-25 minutes.
  10. Use a meat thermometer to ensure the chicken has reached an internal temperature of at least 165 degrees before removing it from the oven.
  11. Cool before serving.

Notes

  • This dish is best served with a side of rice or crusty bread to soak up the delicious sauce.
  • You can substitute the chicken thighs with bone-in chicken breasts if preferred.
