Description

Delicious and moist apple muffins perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup Greek yogurt
  • ¼ cup vegetable oil
  • ¼ cup milk
  • 1 cup apples, peeled and diced

Instructions

  1. Preheat oven to 375°F and line or grease a muffin tin.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together brown sugar, eggs, vanilla, Greek yogurt, oil, and milk.
  4. Fold in diced apples into the wet mixture.
  5. Slowly mix dry ingredients into wet, stirring just until combined.
  6. Fill muffin cups ¾ full with batter.
  7. Bake for 18–22 minutes until a toothpick inserted comes out clean.
  8. Let muffins cool in the tin for a few minutes before transferring to a wire rack.

  • These muffins can be stored in an airtight container for up to a week.
  • They are great for freezing, simply thaw before serving.
