Delicious and moist apple muffins perfect for breakfast or a snack.
Ingredients

- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup Greek yogurt
- ¼ cup vegetable oil
- ¼ cup milk
- 1 cup apples, peeled and diced
Instructions
- Preheat oven to 375°F and line or grease a muffin tin.
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, whisk together brown sugar, eggs, vanilla, Greek yogurt, oil, and milk.
- Fold in diced apples into the wet mixture.
- Slowly mix dry ingredients into wet, stirring just until combined.
- Fill muffin cups ¾ full with batter.
- Bake for 18–22 minutes until a toothpick inserted comes out clean.
- Let muffins cool in the tin for a few minutes before transferring to a wire rack.
Notes
- These muffins can be stored in an airtight container for up to a week.
- They are great for freezing, simply thaw before serving.
