- 2 eggs
- 2 cups peeled and diced apples
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/4 cup flour for topping
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk melted butter, milk, and eggs.
- Add wet ingredients to dry ingredients and mix gently.
- Fold in diced apples.
- In a small bowl, mix brown sugar, oats, and flour for topping.
- Fill muffin tins with batter and sprinkle topping on each.
- Bake for 20-25 minutes or until golden brown.
- Cool before serving.

- For extra flavor, add nuts or raisins to the mixture.
