Description

Delicious and healthy zucchini tots made with grated zucchini and mashed sweet potato.


Ingredients

  • 2 medium zucchinis (about 250g), grated
  • 1 cup (250g) cooked mashed sweet potato
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons coconut flour

Instructions

  1. Preheat your oven to 160°C (350°F) and line a baking tray with baking paper to prevent sticking and ensure easy cleanup.
  2. Use your hands to thoroughly squeeze out all the moisture from the grated zucchini, which is crucial to prevent soggy tots and help them hold their shape.
  3. In a large bowl, combine the dried zucchini, cooked mashed sweet potato, garlic powder, sea salt, black pepper, and coconut flour. Mix until the ingredients are evenly incorporated into a uniform mixture.
  4. Using a tablespoon, scoop and shape the mixture into small tot-sized cylinders or rounds. Place them spaced evenly on the prepared baking tray.
  5. Bake in the preheated oven for 30-35 minutes or until the tots are slightly golden brown and firm on the outside.
  6. Remove from the oven and serve warm with your favorite dipping sauce for a tasty snack or side dish.
