- 4 medium sweet potatoes (Choose similar sizes for even cooking.)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 serving Greek yogurt (Can be added for creaminess.)
- 1 tablespoon chives (Chopped for garnish.)
- 1 teaspoon chili powder (Add for a spicy kick.)
- 1/4 cup your favorite nuts (For added crunch.)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly under cold water, scrubbing away any dirt. Pat them dry with a towel.
- Use a fork to prick the sweet potatoes about 6-8 times. This helps steam escape while baking. Rub olive oil all over each sweet potato, then sprinkle them with salt and pepper.
- Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for about 40-45 minutes, or until a fork easily pierces through the flesh.
- Once done, remove the sweet potatoes from the oven and let them cool for a few minutes. Slice open, fluff the inside with a fork, and add your favorite toppings.
