Ingredients

  • 4 medium sweet potatoes (Choose similar sizes for even cooking.)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 serving Greek yogurt (Can be added for creaminess.)
  • 1 tablespoon chives (Chopped for garnish.)
  • 1 teaspoon chili powder (Add for a spicy kick.)
  • 1/4 cup your favorite nuts (For added crunch.)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under cold water, scrubbing away any dirt. Pat them dry with a towel.
  3. Use a fork to prick the sweet potatoes about 6-8 times. This helps steam escape while baking. Rub olive oil all over each sweet potato, then sprinkle them with salt and pepper.
  4. Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for about 40-45 minutes, or until a fork easily pierces through the flesh.
  5. Once done, remove the sweet potatoes from the oven and let them cool for a few minutes. Slice open, fluff the inside with a fork, and add your favorite toppings.
