Description

Ingredients

  • 3 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup melted butter or coconut oil
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. I always leave a little overhang on the sides so lifting the bars out later is effortless.
  2. In a large bowl, mash the ripe bananas until mostly smooth. A few small lumps are perfectly fine. The riper the bananas, the sweeter and more flavorful your bars will be.
  3. Add the melted butter, brown sugar, milk, egg, and vanilla extract to the mashed bananas. Stir until everything is fully combined and smooth.
  4. Stir in the rolled oats, cinnamon, baking powder, and salt. Mix gently until just combined. If you’re adding chocolate chips or nuts, fold them in now.
  5. Pour the mixture into the prepared pan and spread evenly. The batter will be thick. Bake for 22–28 minutes, or until the edges turn golden and a toothpick inserted in the center comes out clean.
  6. Allow the Banana Oatmeal Bars to cool completely before slicing. This helps them set properly and gives you clean, neat squares.
