Delicious and healthy banana oatmeal bars perfect for breakfast or a snack.

- 3 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup brown sugar
- 1/4 cup melted butter or coconut oil
- 1/4 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. I always leave a little overhang on the sides so lifting the bars out later is effortless.
- In a large bowl, mash the ripe bananas until mostly smooth. A few small lumps are perfectly fine. The riper the bananas, the sweeter and more flavorful your bars will be.
- Add the melted butter, brown sugar, milk, egg, and vanilla extract to the mashed bananas. Stir until everything is fully combined and smooth.
- Stir in the rolled oats, cinnamon, baking powder, and salt. Mix gently until just combined. If you’re adding chocolate chips or nuts, fold them in now.
- Pour the mixture into the prepared pan and spread evenly. The batter will be thick. Bake for 22–28 minutes, or until the edges turn golden and a toothpick inserted in the center comes out clean.
- Allow the Banana Oatmeal Bars to cool completely before slicing. This helps them set properly and gives you clean, neat squares.
