- 1 cup pumpkin purée
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 and 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon allspice
Instructions
- In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
- Add in pumpkin purée, egg yolk, and vanilla extract. Mix until smooth.
- In a separate bowl, whisk together flour, baking soda, salt, and all the spices.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Cover and chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized dough balls onto the baking sheet.
- Bake for 10–12 minutes until edges are set and centers are soft.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm or store in an airtight container.

- Chilling the dough helps improve the texture of the cookies.
- These cookies can be customized with nuts or chocolate chips if desired.
