Ingredients

Instructions

  1. Mix the dry ingredients
    In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. This gives the pancakes structure while keeping them fluffy.
  2. Blend the wet ingredients
    In another bowl, combine the coconut cream, milk, eggs, melted butter (or coconut oil), and vanilla extract. Stir until everything is smooth and creamy. The coconut cream will be thick, so take your time mixing to ensure it’s fully incorporated.
  3. Combine wet and dry mixtures
    Pour the wet ingredients into the bowl of dry ingredients and gently fold everything together. Don’t overmix—just stir until you no longer see streaks of flour. A few small lumps are perfectly fine.
  4. Heat the skillet
    Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. You’ll know it’s ready when a drop of water sizzles on the surface.
  5. Cook the pancakes
    Scoop ¼ cup of batter onto the skillet for each pancake. Let it cook until bubbles form on the surface and the edges start to look set, about 2–3 minutes. Flip and cook the other side for another 1–2 minutes, or until golden brown.
