Description
This creamy raspberry mousse dessert is a delightful treat that combines the fresh flavors of raspberries and cream cheese for a light, airy dessert.
Ingredients
Scale
- 1 cup fresh raspberries (plus extra for garnish)
- 2 cups heavy cream
- 8 oz cream cheese
- 1 tablespoon gelatin powder
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1/2 cup graham cracker crumbs
- 2 tablespoons butter (melted)
- Mint leaves for garnish (optional)
Instructions
- Prepare the Gelatin: In a small bowl, dissolve the gelatin powder in 1/4 cup of cold water. Let it sit for 5 minutes to bloom.
- Make the Raspberry Puree: In a blender, puree the raspberries until smooth. Strain through a sieve to remove seeds.
- Combine Ingredients: In a medium saucepan, heat the raspberry puree over low heat. Add sugar and lemon juice, stirring until sugar is dissolved. Add the bloomed gelatin to the raspberry mixture, stirring until fully dissolved. Remove from heat and let it cool.
- Mix the Cream Cheese: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the cooled raspberry mixture, blending until fully combined.
- Whip the Cream: In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the raspberry mixture.
- Prepare the Crust: Mix graham cracker crumbs with melted butter. Press a small amount into the bottom of each serving glass.
- Assemble the Dessert: Pour the raspberry mousse over the graham cracker crust in each glass. Smooth the tops with a spatula.
- Chill: Refrigerate for at least 4 hours or until set.
- Garnish: Before serving, top each mousse with a dollop of whipped cream, a fresh raspberry, and a sprinkle of graham cracker crumbs. Add a mint leaf for garnish, if desired.
Notes
- For extra flavor, consider adding a splash of raspberry liqueur to the puree.
- Ensure the raspberry mixture is completely cooled before folding in the whipped cream to prevent it from deflating.
- Adjust sweetness by adding more sugar or using less, depending on personal preference.
- For a firmer mousse, increase the amount of gelatin slightly.
