Description
A delicious and healthy riced cauliflower recipe made with slivered almonds and fresh herbs.
Ingredients

- 1 medium head cauliflower (about 600g), riced
- 1/2 cup slivered almonds (about 60g)
- 1/2 cup fresh parsley or cilantro, chopped (about 30g)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the cauliflower under cold water, remove leaves and stem, then chop into florets. Rice the florets using a food processor or box grater until you achieve grain-like pieces.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Stir in the riced cauliflower, seasoning with salt and pepper. Cook for about 4 minutes until tender.
- Fold in sliced almonds and chopped herbs, mixing well to combine.
- Taste and adjust seasoning if necessary before serving.

- This dish can be served as a side or a light main course.
