Description

Delicious chocolate chip cookies with a surprise of Cadbury Mini Eggs.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 2 large eggs (at room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips (plus more for topping)
  • 1 cup Cadbury Mini Eggs (roughly chopped, plus more for topping)

Instructions

  1. Preheat the oven to 350°F (180°C), or 320°F (160°C) for a fan oven. Line 3 cookie sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until smooth and creamy, about 2 to 3 minutes.
  4. Add the eggs and pure vanilla extract. Beat until fully incorporated, about 1 minute.
  5. Add the dry ingredients to the wet ingredients. Mix until just combined.
  6. Fold in the chocolate chips and chopped mini eggs.
  7. Scoop the dough into 1½ tablespoon portions and place them 2 inches apart on the prepared cookie sheets. Top with extra chocolate chips and chopped mini eggs if desired.
  8. Bake for 8 to 10 minutes or until the edges are lightly golden and the centers still look slightly soft.
  9. Cool the cookies on the baking sheets for 10 minutes. Transfer to a wire rack to cool completely.

Notes

  • The dough may be refrigerated for up to 24 hours before baking.
  • For chewier cookies, slightly underbake.
