Ingredients

  • 4 large eggs

  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)
  • Pink food coloring
  • Pink and white edible pearls (for decoration)
  • Pink heart-shaped sprinkles (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9×9 inch cake pans with parchment paper.
  2. In a bowl, sift all-purpose flour, baking powder, and salt together.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture, alternating with milk, starting and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. In a large bowl, beat the softened butter until creamy. Gradually add powdered sugar, beating well after each addition.
  10. Add heavy cream and vanilla extract; mix until combined. Add a few drops of pink food coloring and beat until the frosting is evenly colored and fluffy.
  11. Assemble the cake by placing one layer on a serving plate. Spread a generous amount of pink frosting over the top. Place the second layer on top and cover the top and sides with more frosting.
  12. Decorate the top of the cake with pink and white edible pearls and heart-shaped sprinkles.

  • For extra moistness, consider brushing the cake layers with simple syrup before frosting.
  • Adjust the amount of food coloring to achieve the desired shade of pink.
