Description
Delicious grilled chicken breasts marinated in salsa verde and spices, topped with Pepper Jack cheese.

- 1 ½ pounds thin-sliced boneless skinless chicken breasts (about 4 breasts)
- 12 ounces salsa verde (Trader Joe’s recommended)
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1 teaspoon salt, or more to taste
- 1 teaspoon freshly ground black pepper
- 4 slices Pepper Jack cheese (or as desired)
- Fresh cilantro, finely minced (optional for garnishing)
- Lime wedges (optional for serving)
Instructions
- In a large zip-top plastic bag, combine the salsa verde, olive oil, lime juice, cumin, salt, and black pepper. Add the thin-sliced chicken breasts to the bag, seal it tightly, and massage the marinade around the chicken pieces until evenly coated.
- Place the sealed bag in the refrigerator and let the chicken marinate for at least 30 minutes, or preferably overnight, to allow the flavors to penetrate the meat.
- Lightly oil the grill grates to prevent sticking. Preheat your grill to medium-high heat, ensuring it reaches an even temperature for grilling.
- Place the marinated chicken breasts on the hot grill. Close the lid and cook the chicken for about 5 minutes on the first side, then flip the breasts over and grill for another 4 minutes with the lid closed, or until the chicken is fully cooked and juices run clear.
- Reduce the grill heat to medium-low. Place one slice of Pepper Jack cheese on top of each chicken breast. Close the grill lid and allow the cheese to melt for about 1 minute.
- Remove the chicken from the grill and optionally garnish with finely minced fresh cilantro. Serve warm with lime wedges on the side. Adjust seasoning with additional salt, pepper, or salsa as desired before serving.
Notes
- Letting the chicken marinate overnight enhances the flavor.
- Adjust the amount of salt and pepper to your taste.
