Description

Delicious chocolate cupcakes filled with cherry pie filling and topped with whipped cream.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ cup hot water
  • ½ cup cherry pie filling (for centers)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract (for whipped cream)
  • Dark chocolate shavings or curls (for topping)
  • Maraschino cherries (for garnish)

Instructions

  1. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  2. Beat sugar and oil until light and fluffy, then add eggs and vanilla. Pour in buttermilk and mix until smooth.
  3. Gradually add the dry mix to the wet while alternating with hot water. Fill cupcake liners ¾ full and bake at 350°F (175°C) for 18–20 minutes.
  4. Once cooled, scoop out a small center of each cupcake and fill with cherry pie filling.
  5. Pipe whipped cream (whipped with powdered sugar + vanilla) over each cupcake. Garnish with chocolate shavings and a cherry on top.

  • Make sure to let the cupcakes cool completely before adding the cherry filling.
