Delicious grilled portobello mushrooms marinated in a savory miso blend.
Ingredients

- 4 large portobello mushrooms
- 2 tbsp white miso paste
- 2 tbsp pure maple syrup
- 2 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp toasted sesame seeds
- chopped cilantro or green onions
Instructions
- Whisk together miso paste, maple syrup, soy sauce, garlic, and ginger in a bowl until smooth to create the marinade.
- Coat cleaned portobello mushrooms in the marinade and let them soak for at least 30 minutes.
- Preheat your grill to medium-high heat (around 400°F/200°C).
- Remove mushrooms from the marinade (reserve it) and grill for about 5-7 minutes on each side until tender and marked.
- Brush reserved marinade onto the mushrooms during the last few minutes of grilling for added flavor.
- Serve garnished with sesame seeds and chopped herbs.
Notes
- For extra flavor, let the mushrooms marinate longer if time allows.
- This recipe pairs well with a side of rice or salad.
