- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup coarsely chopped pistachios
- 1/4 cup melted coconut oil
- 1/4 cup pure maple syrup
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking soda, and salt.
- In another bowl, combine melted coconut oil, sugar, maple syrup, and vanilla extract; whisk until smooth.
- Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in chopped pistachios.
- Scoop tablespoon-sized portions onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes until edges are golden brown while centers remain soft. Let cool before enjoying.
