Ingredients

- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk (can substitute with almond milk)
- 1 large egg
- 2 tbsp melted butter (plus more for cooking)
- 1 tsp vanilla extract
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Using a ladle, pour small amounts of batter onto the skillet to form mini pancakes.
- Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
- Repeat with remaining batter, greasing the skillet as needed.
- Serve warm with maple syrup, fresh fruit, or your favorite toppings.
Notes
- For best results, do not overmix the batter.
- Feel free to add chocolate chips or blueberries for extra flavor!
