- 2 tbsp olive oil
- 1 cup sun-dried tomatoes (packed in oil)
- 4 cups fresh spinach
- 4 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian herbs
Instructions
- Preheat oven to 400°F (200°C) and heat olive oil in a large oven-safe skillet over medium heat.
- Season chicken breasts with salt and pepper; sear in the skillet until golden brown, about 5 minutes per side.
- Add minced garlic and sun-dried tomatoes; sauté for an additional minute until fragrant.
- Pour in heavy cream and stir in dried Italian herbs; simmer until slightly thickened.
- Stir in fresh spinach until wilted, then transfer the skillet to the preheated oven.
- Bake for about 10 minutes or until chicken reaches an internal temperature of at least 165°F (75°C). Serve warm.
