Description

Ingredients

  • 2 tbsp olive oil
  • 1 cup sun-dried tomatoes (packed in oil)
  • 4 cups fresh spinach
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs

Instructions

  1. Preheat oven to 400°F (200°C) and heat olive oil in a large oven-safe skillet over medium heat.
  2. Season chicken breasts with salt and pepper; sear in the skillet until golden brown, about 5 minutes per side.
  3. Add minced garlic and sun-dried tomatoes; sauté for an additional minute until fragrant.
  4. Pour in heavy cream and stir in dried Italian herbs; simmer until slightly thickened.
  5. Stir in fresh spinach until wilted, then transfer the skillet to the preheated oven.
  6. Bake for about 10 minutes or until chicken reaches an internal temperature of at least 165°F (75°C). Serve warm.
