Description

This Rich Cherry Chocolate Cake is a decadent dessert combining rich chocolate cake layers with a cherry filling and chocolate ganache.

  • 1 cup (200 g) dark chocolate chips
  • 1 can (21 oz) cherry pie filling or 2 cups fresh cherries, pitted
  • ½ cup (120 ml) heavy cream
  • ½ cup (120 g) cherries for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs, one at a time. Stir in the vanilla extract.
  4. Mix Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Combine Mixtures: Alternately add the dry mixture and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
  6. Fold in Chocolate Chips: Gently fold in the dark chocolate chips.
  7. Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  8. Prepare Cherry Filling: If using fresh cherries, cook them in a saucepan over medium heat with a bit of sugar until they soften. If using the cherry pie filling, you can use it directly.
  9. Prepare Ganache: Heat the heavy cream in a saucepan until it simmers. Pour over the remaining chocolate chips in a bowl and stir until smooth.
  10. Assemble the Cake: Place one layer of cake on a serving plate. Spread cherry filling over the top. Place the second layer on top. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  11. Garnish: Garnish with additional cherries if desired.
