This Rich Cherry Chocolate Cake is a decadent dessert combining rich chocolate cake layers with a cherry filling and chocolate ganache.

- 1 can (21 oz) cherry pie filling or 2 cups fresh cherries, pitted
- ½ cup (120 ml) heavy cream
- ½ cup (120 g) cherries for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream Butter and Sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs, one at a time. Stir in the vanilla extract.
- Mix Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- Combine Mixtures: Alternately add the dry mixture and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
- Fold in Chocolate Chips: Gently fold in the dark chocolate chips.
- Bake the Cake: Divide the batter evenly between the prepared cake pans. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- Prepare Cherry Filling: If using fresh cherries, cook them in a saucepan over medium heat with a bit of sugar until they soften. If using the cherry pie filling, you can use it directly.
- Prepare Ganache: Heat the heavy cream in a saucepan until it simmers. Pour over the remaining chocolate chips in a bowl and stir until smooth.
- Assemble the Cake: Place one layer of cake on a serving plate. Spread cherry filling over the top. Place the second layer on top. Pour the ganache over the top of the cake, allowing it to drip down the sides.
- Garnish: Garnish with additional cherries if desired.

- For an extra moist cake, brush the layers with simple syrup (equal parts sugar and water) before assembling.
- If using fresh cherries, adding a splash of cherry liqueur to the filling can enhance the flavor.
