Description
A tender and flavorful beef roast served with a rich mushroom gravy.
Ingredients

- 3–4 lb beef roast
- 2 tbsp olive oil
- 1 tbsp sea salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- Fresh thyme/rosemary
- 2 tbsp oil or butter
- 2 cups sliced mushrooms
- 2 garlic cloves
- 2 tbsp flour
- 2 cups beef broth
- 1/2 tsp pepper
- Salt
- 1 tsp fresh thyme
Instructions
- Rub roast with oil and seasonings. Sear all sides.
- Bake at 375°F (190°C) for 50–60 minutes. Rest for 10–15 minutes.
- Sauté mushrooms, add garlic. Add flour, then broth. Simmer until thick.
- Slice beef thickly and cover with mushroom gravy.
Notes
- For best results, use a meat thermometer to ensure desired doneness.
- Let the roast rest before slicing for juicier meat.
