- 1 cup green or brown lentils (dried)
- 1 sheet puff pastry
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 2 cups low-sodium vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse lentils under cold water. In a pot, combine lentils and vegetable broth; bring to a boil. Reduce heat and simmer for 20-25 minutes until tender.
- In a skillet over medium heat, heat olive oil. Sauté onions for about 5 minutes until translucent, then add minced garlic and cook for another minute.
- Stir in cumin and cinnamon; cook until fragrant.
- Drain any excess broth from lentils and mix into the skillet with sautéed onions. Season with salt and pepper; simmer for an additional 5 minutes.
- Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface; fit one sheet into a greased baking dish. Pour in lentil mixture and top with another pastry layer. Cut slits in the top for ventilation.
- Bake for 25-30 minutes until golden brown.
