Instructions

  1. Prepare the Polenta: Bring chicken broth to a boil in a saucepan. Gradually whisk in the polenta, stirring continuously. Reduce heat to low and continue stirring until thickened, about 15-20 minutes. Stir in Parmesan cheese and butter. Mix well until creamy. Pour the polenta into a greased baking dish and let it cool until firm.
  2. Cook the Shrimp: In a large skillet, heat olive oil over medium heat. Add garlic, smoked paprika, and red pepper flakes, sautéing until fragrant. Add the shrimp and cook until pink and opaque, about 3-4 minutes per side. Drizzle with lemon juice and season with salt and pepper. Remove from heat.
  3. Form and Cook the Polenta Cakes: Once the polenta is firm, cut it into cake-sized rounds. Heat a bit of olive oil in a non-stick skillet over medium heat. Fry the polenta cakes until golden brown on both sides, about 3-4 minutes per side.
  4. Assemble the Dish: Place polenta cakes on a serving plate. Top with cooked shrimp. Garnish with chopped fresh parsley.
