Description

This Chicken Cauliflower Rice Skillet is a quick and healthy dinner option packed with flavor and nutrients.


Ingredients

  • 3 boneless, skinless chicken breasts (1 lbs), diced
  • 2 cups cauliflower rice (fresh or frozen)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder (adjust to taste)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced chicken and season with salt, pepper, cumin, paprika, and chili powder. Sauté until golden brown and cooked through (7-8 minutes).
  3. Add chopped onion and bell peppers; cook for about 5 minutes until softened.
  4. Stir in minced garlic; sauté for another minute until fragrant.
  5. Mix in cauliflower rice and additional spices if desired. Cook for another 5 minutes until everything is heated through.
  6. Remove from heat, garnish with fresh cilantro, and serve hot with lime wedges on the side.
