- 3 boneless, skinless chicken breasts (1 lbs), diced
- 2 cups cauliflower rice (fresh or frozen)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced chicken and season with salt, pepper, cumin, paprika, and chili powder. Sauté until golden brown and cooked through (7-8 minutes).
- Add chopped onion and bell peppers; cook for about 5 minutes until softened.
- Stir in minced garlic; sauté for another minute until fragrant.
- Mix in cauliflower rice and additional spices if desired. Cook for another 5 minutes until everything is heated through.
- Remove from heat, garnish with fresh cilantro, and serve hot with lime wedges on the side.
