- 1 package (10 oz) cheese tortellini
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
- Red pepper flakes (optional, for extra spice)
Instructions
- Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through. Remove from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the onion and red bell pepper. Sauté for 5 minutes until softened. Add the garlic and cook for another minute until fragrant.
- Prepare the Sauce: Pour in the chicken broth, scraping up any bits from the bottom of the skillet. Add the heavy cream and bring to a simmer. Let it reduce slightly.
- Cook the Tortellini: Meanwhile, cook the tortellini according to the package instructions. Drain and set aside.
- Combine Ingredients: Add the cooked sausage back into the skillet, then add the cooked tortellini. Stir in the Parmesan cheese and season with salt, pepper, and red pepper flakes if using.
- Serve: Garnish with fresh parsley and extra cheese if desired. Serve hot.
