Instructions

  1. Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through. Remove from the skillet and set aside.
  2. Sauté Vegetables: In the same skillet, add the onion and red bell pepper. Sauté for 5 minutes until softened. Add the garlic and cook for another minute until fragrant.
  3. Prepare the Sauce: Pour in the chicken broth, scraping up any bits from the bottom of the skillet. Add the heavy cream and bring to a simmer. Let it reduce slightly.
  4. Cook the Tortellini: Meanwhile, cook the tortellini according to the package instructions. Drain and set aside.
  5. Combine Ingredients: Add the cooked sausage back into the skillet, then add the cooked tortellini. Stir in the Parmesan cheese and season with salt, pepper, and red pepper flakes if using.
  6. Serve: Garnish with fresh parsley and extra cheese if desired. Serve hot.
