Description

Delicious homemade strawberry cinnamon rolls that are soft, fluffy, and drizzled with a sweet glaze.


Ingredients

Scale
  • 3 cups (360g) plain flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp salt
  • 3/4 cup warm milk
  • 1/4 cup (60g) unsalted butter, melted
  • 1 large egg, room temp
  • 1 heaping cup (160g) diced fresh strawberries
  • 1/2 cup (100g) brown sugar
  • 2 tsp ground cinnamon
  • 3 tbsp (40g) unsalted butter, softened, for filling
  • 1 cup (120g) powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Bloom the yeast: In a big bowl, stir the warm milk and 1 tbsp sugar. Sprinkle yeast in, walk away 5 min, come back. It should look foamy—if not, well, sigh, try again with fresher yeast.
  2. Mix the dough: Dump in the rest of the sugar, melted butter, egg, and salt. Stir. Add flour a bit at a time, mixing after each addition. If it’s sticky, don’t panic, add a bit more flour—dough should be soft but not glue-like.
  3. Knead, sort of: Flour your hands and knead dough in the bowl or on the counter for about 5–8 minutes. Shape into a ball, plop into a greased bowl, cover with a tea towel.
  4. Spread softened butter all over. Sprinkle over brown sugar, cinnamon, then scatter diced strawberries.
  5. Roll tightly (lengthwise), pinching the seam. Slice into roughly 12 rolls, about 1 inches thick.
  6. Arrange rolls, swirl side up, in a greased 9×13-inch pan. Cover and let puff up for 30–45 minutes. Preheat oven to 350°F (175°C).
  7. Pop them in for 22–26 minutes, until golden.
  8. While they bake or cool, whisk up powdered sugar, milk, and vanilla. Drizzle or slather over warm rolls.

Notes

  • Sometimes I sub half the plain flour with whole wheat, nobody notices.
  • Brown sugar works for a more rustic flavor.
  • If strawberry bits fall out when slicing, eat them.
  • Use dental floss for slicing for sharp edges.
