Key Ingredients for Chicken with Green Chiles and Cheese

Chicken: For the star of Chicken with Green Chiles and Cheese, I use boneless, skinless chicken breasts. They are lean and absorb flavors beautifully. You can also opt for thighs if you prefer a richer taste or more moisture in your dish.

Green Chiles: Opt for diced green chiles, either fresh or canned. They provide a delightful kick without overwhelming the dish. If you like it spicier, consider using whole chiles or even roasting your own for an extra depth of flavor.

Cheese: I love a mix of pepper jack cheese for its melty texture and a hint of spice, paired with sharp cheddar for richness. This combination creates a gooey, satisfying topping that complements the chicken and chiles perfectly.

Cream: Incorporating heavy cream adds a luscious creaminess to the dish, ensuring every bite feels indulgent. It balances the heat of the chiles magnificently and creates a silky sauce.

Spices: A simple blend of garlic powder, cumin, and salt enhances the dish’s warmth and earthiness. These spices are carefully chosen to elevate, not overpower, the other flavors in your Chicken with Green Chiles and Cheese.

Spice it Up

If you enjoy a kick, why not add some diced jalapeños along with your green chiles? This can elevate the heat level and add a distinct flavor contrast. Alternatively, a dash of cayenne pepper or chili powder in the seasoning blend can make your dish pop with extra zest.

Cheese Options

While melted cheddar is the star in our original recipe, mixing in some pepper jack or Monterey Jack can create a creamy, zesty profile. For a gourmet twist, try topping your dish with crumbled queso fresco or even adding a layer of cream cheese before baking for extra richness.

Vegetable Boost

Want to get more veggies on your plate? Chopped bell peppers, diced tomatoes, or even corn can add color, texture, and nutrition. Sauté them briefly before mixing them into your chicken and cheese combination, ensuring they blend well together.

Make it a Casserole

Transform your Chicken with Green Chiles and Cheese into a casserole by layering it with tortillas. Stack the chicken and chiles between tortilla layers and pour on a bit more cheese before baking. This dish becomes a cheesy, comforting meal that’s perfect for sharing.

Cooking Tips and Notes

Elevating your Chicken with Green Chiles and Cheese dish from good to great can be simpler than you might think. Here are some handy tips and insights to ensure your meal turns out perfect every time.

Choosing the Right Chicken

Opt for boneless, skinless chicken breasts for a quick-cooking solution. If you prefer dark meat, thighs can offer a more tender and flavorful alternative. Cook them until they reach an internal temperature of 165°F for safety and juiciness.

Spice It Up

When it comes to chiles, you can adjust the heat according to your preference. If you’re a fan of spice, fresh jalapeños can add that extra kick, while poblanos offer a milder flavor. For a smoky touch, consider incorporating chipotle peppers.

Cheese Selection

For the gooey cheese topping, I recommend a blend of cheddar and Monterey Jack. They melt beautifully and balance well with the heat of the chiles. If you’re feeling adventurous, a sprinkle of crumbled feta or cotija can add an interesting twist.

Cooking Method

Baking at 375°F allows the flavors to meld beautifully while keeping the chicken moist. If you’re short on time, you can also grill or sauté the chicken, finishing with cheese until bubbling.

By focusing on quality and proper technique, your Chicken with Green Chiles and Cheese will tantalize taste buds and bring comfort to your table. Enjoy the process!

Refreshing Salads

To balance the richness, consider serving a light, zesty salad. A mix of mixed greens tossed in a lime vinaigrette or a corn and black bean salad can be refreshing. They add a crunchy element that complements the creamy chicken beautifully.

Can I use skin-on chicken for this recipe?

Absolutely! Using skin-on chicken can add extra flavor and richness to your Chicken with Green Chiles and Cheese. The skin helps retain moisture during cooking, resulting in juicy meat that contrasts beautifully with the creamy cheese sauce. Just be sure to monitor the cooking time, as skin-on pieces may take a bit longer to cook through.

To keep the chicken juicy, consider brining it beforehand. A simple saltwater soak for about 30 minutes can enhance the moisture within the meat. Description

A delicious and easy recipe for Chicken with Green Chile and Cheese.

Ingredients

Scale
  • 4 large boneless, skinless chicken breasts, trimmed of any fat and undesirable parts
  • 1 tablespoon olive oil (or oil of your choice for browning chicken)
  • 1 teaspoon Kalyn’s Taco Seasoning (See notes)
  • salt and fresh-ground black pepper to taste for seasoning chicken
  • 2 cans (7 oz. each) whole roasted green chiles
  • 1 cup Herdez Salsa Verde (or any green chile sauce that’s thick and low in sugar)
  • 1 cup grated Mexican cheese blend (or more)
  • Add optional toppings: sour cream, salsa, chopped avocado, or Green Tabasco Sauce at the table

Instructions

  1. Preheat oven to 400F/200C. Spray a 9″ x 13″ glass or crockery casserole dish with olive oil or non-stick spray.
  2. Trim chicken breasts to remove any fat or undesirable parts.
  3. Heat olive oil in a large non-stick pan over medium-high heat.
  4. Season chicken breasts with taco seasoning, salt, and pepper; then cook chicken exactly three minutes per side. Remove chicken to a cutting board.
  5. While chicken cooks, dump the whole roasted green chiles into a colander in the sink and let them drain for a few minutes.
  6. Split each chile in half with your fingers, remove any seeds, and spread chiles out on paper towels. Cover the chiles with another layer of paper towels and push down to remove as much water as possible.
  7. Once chicken has cooled enough to handle, cut each chicken breast into 3 or 4 lengthwise strips.
  8. Spread 1/4 cup of the Herdez Salsa Verde in the bottom of the baking dish and lay the chicken strips crosswise in the dish.
  9. Cover chicken strips with the drained green chiles. Top with the rest of the sauce and grated cheese.
  10. Bake for 20-25 minutes, or until the cheese is completely melted. Optionally, broil for 1-2 minutes to brown the cheese.
  11. Serve hot with optional toppings at the table.

Notes

  • Use chicken that is trimmed well to avoid excess fat.
  • If the salsa verde is watery, you can simmer it to thicken before using.
  • Adjust seasoning as desired.
  • Green Tabasco Sauce is optional but adds nice heat.
