Description

A delicious and easy recipe for Chicken with Green Chile and Cheese.


Ingredients

Scale
  • 4 large boneless, skinless chicken breasts, trimmed of any fat and undesirable parts
  • 1 tablespoon olive oil (or oil of your choice for browning chicken)
  • 1 teaspoon Kalyn’s Taco Seasoning (See notes)
  • salt and fresh-ground black pepper to taste for seasoning chicken
  • 2 cans (7 oz. each) whole roasted green chiles
  • 1 cup Herdez Salsa Verde (or any green chile sauce that’s thick and low in sugar)
  • 1 cup grated Mexican cheese blend (or more)
  • Add optional toppings: sour cream, salsa, chopped avocado, or Green Tabasco Sauce at the table

Instructions

  1. Preheat oven to 400F/200C. Spray a 9″ x 13″ glass or crockery casserole dish with olive oil or non-stick spray.
  2. Trim chicken breasts to remove any fat or undesirable parts.
  3. Heat olive oil in a large non-stick pan over medium-high heat.
  4. Season chicken breasts with taco seasoning, salt, and pepper; then cook chicken exactly three minutes per side. Remove chicken to a cutting board.
  5. While chicken cooks, dump the whole roasted green chiles into a colander in the sink and let them drain for a few minutes.
  6. Split each chile in half with your fingers, remove any seeds, and spread chiles out on paper towels. Cover the chiles with another layer of paper towels and push down to remove as much water as possible.
  7. Once chicken has cooled enough to handle, cut each chicken breast into 3 or 4 lengthwise strips.
  8. Spread 1/4 cup of the Herdez Salsa Verde in the bottom of the baking dish and lay the chicken strips crosswise in the dish.
  9. Cover chicken strips with the drained green chiles. Top with the rest of the sauce and grated cheese.
  10. Bake for 20-25 minutes, or until the cheese is completely melted. Optionally, broil for 1-2 minutes to brown the cheese.
  11. Serve hot with optional toppings at the table.

Notes

  • Use chicken that is trimmed well to avoid excess fat.
  • If the salsa verde is watery, you can simmer it to thicken before using.
  • Adjust seasoning as desired.
  • Green Tabasco Sauce is optional but adds nice heat.
